Lavender Cookies, Seriously? Yeah, Seriously Good!!

Several years ago a couple from our church gave us some lavender cookies AND a package of organic lavender. Thus began a new ministry of making lavender cookies to gift,  especially for friends going through chemotherapy.  There’s something about the lavender that helps control nausea. Disclaimer: It may not work for everyone, but it has helped some friends and me.  Actually, I just use that as an excuse to eat more cookies!  Since so many have asked for the recipe here it is, so simple  to make and always a hit!

Lavender Cookies

1 cup  unsalted butter (2 sticks softened). Use ONLY BUTTER
1 cup sugar (preferably organic but any will do)
1 large egg
2-1/2 cups all-purpose flour or cake flour (I use organic flour)
½ teaspoon salt
1 tablespoon culinary lavender flowers

Preheat oven to 350. Line 2 cookie sheets with parchment paper. In electric mixing bowl beat together butter & sugar. Add egg & beat until well combined. Stir flour &  salt together and add to the butter mixture. Then add lavender until well  combined. Roll into balls and smoosh down with bottom of  glass or your surgically cleansed palm.  Bake for 15 minutes in conventional oven or 11 minutes in convection oven  until edges are golden brown. Place on wire rack to cool. Sometimes I dust them with powdered sugar  but mostly I  don’t.  Around Christmas time I sometimes put a light white icing on them and sprinkle with those sparkly colored, glittery things that you can get in grocery baking aisle.  Orange and black ones are fun around Halloween,  and red & white for Valentine’s day.  My humble attempts at being creative.

You can probably get lavender at Whole Foods or Trader Joes.  I get organic lavender on the Amazon Prime sight.  There are quite a few choices. A  pound will last you almost  forever or you may put a few tablespoons in a little snack pack and give them out with the recipe which is a nice touch for those who want to try baking them but  don’t  care to order a pound of lavender right off the bat. You may also be rewarded with a forever friend!  I thank Randy & Sheila Bosch for introducing  me to this wonderful recipe! That was one of the best gifts ever! Seriously!!!!!!!!

  3. I just learned from Sheila that a drop of lavender oil added to the recipe gives it a perk and kitchen smells great while cookies are baking. I checked the lavender oil I have on hand, but it’s for external use only. I will be looking for the oil that’s safe for internal use.
